Masak Lemak CilI Api

MASAK LEMAK CILI API

Masak Lemak Cili Api is one of the most popular dish in Negeri Sembilan. It is a yellow gravy dish that serves whether with meat or chicken in addition of fresh tumeric. The cili api gives plenty of heat to this dish.

Ingredients
1 whole chicken, cut into 8 pieces
3 Tomatoes, cut into wedges
4 Potatoes cut into wedges
1 Tumeric leaf, tied
1 Lemongrass bruised
2 Green Chillies , halved
1.5 Litre of coconut milk


Blended ingredients
8 red Chillies
6-8 bird’s eye chillies
6 Shallots
2 Clove of garlic
An inch of ginger
An inch of fresh turmeric
2-4 tbs of oil
Salt and sugar for seasoning

METHOD

1.    Heat the wok with oil, saute the blended ingredients until fragrant
2.    Add in lemongrass and turmeric leaf. Continue sauteeing.
3.    Add chicken and potatoes and let it ¼ cook. Mix well to combine with blended ingredients.
4.    Reduce  heat. Add coconut milk and green chillies.
5.    Simmer gently for 10 Minutes
6.    Then, put seasoning . Cook for another 5 minutes . Done!
